This marinade from the Mexican brand Lol-Tun is used to make "Pibil" dishes as they have been prepared on the Mexican peninsula of Yucatan since Mayan times. The most well-known variant is probably "Cochinita Pibil" , where marinated pork is slowly cooked.
Cochinita is a Spanish word for piglet. The word "pibil" comes from the Mayan language, where "pib" means slow roasting. The marinade is based on orange juice and a paste made from annato seeds (Spanish: achiote).
How to use Lol-Tun Pibil Marinade
The meat is marinated in the Pibil marinade, which gives it the deep orange color typical of "Cochinita Pibil". The acid contained in the meat makes it very tender when cooked slowly. To achieve the desired consistency or flavor intensity, the Pibil paste can also be diluted with a little water.
One jar of Pibil marinade is enough for about 1.6 kg of meat.
