The Guajillo is one of the most popular chilis in Mexican cuisine, this Mexican dried chili forms the basis of numerous sauces or dishes in Mexico such as Birria . The Pambazos, Pozole and the tortilla soup get their color from the Guajillo chilis

Guajillo chilis are dark red in color, have thin skin and are about 8-10 cm long. Their taste is usually slightly sweet and fruity, the spiciness is rather low and the heat is almost non-existent.
