Dried chili chiltepin pods, whole
The original form of all chilies. Almost all known hot and mild chili and bell peppers today are descended from this original variety. Our Chiltepin grows in northern Mexico , where the chilies are painstakingly harvested by hand . Many years ago, the indigenous peoples of Mexico used this chili and considered it sacred. Even today, it remains an essential ingredient in traditional dishes.
Chiltepin is among the most endangered foods of the Americas. For this reason, the Slow Food Foundation has included the chili in its " Ark of Taste," an international catalog of endangered historical foods with the aim of preserving them. Furthermore, due to the difficulty of harvesting chili, it is one of the most expensive spices in the world .
Fun fact: Wild chili peppers are spread by birds. They eat the small, fiery peppers and excrete the seeds elsewhere. This also makes chiltepin unique.
