Chile Pasilla (auch Chile Negro genannt) ist eine getrocknete Chili aus Mexiko. Diese Chili-Sorte ist in Mexiko für Saucen oder für die Zubereitung von Moles sehr beliebt.

Die Pasilla-Chili findet man auch in mexikanischen Soßen wie Salsa Borracha, in Marinaden und in Eintöpfen mit Rind- und Hühnerfleisch.

Die Pasilla-Chili ist die gebratene Chilischote, die in kleinen Scheiben auf die klassische Tortilla-Suppe gelegt wird.

Der Geschmack der Pasilla-Chili ist intensiv, ein wenig scharf, aber auch etwas süß. Wegen ihrer dunklen Farbe wird sie auch als schwarzer Chili bekannt.
