The Mirasol chili variety, originating from the Mexican state of Zacatecas and belonging to the Capsicum annuum species, is among the most popular and frequently used chilies in Mexican cuisine. The name Mirasol means "facing the sun" in Spanish and describes the shape in which these chilies grow on the plant. When dried, the chili is called Guajillo, which translates to "large pod," a fitting description for the fruits, which can reach up to 15 cm in length. This chili variety is now cultivated not only in Mexico but also in the southern United States, as well as in Peru and Chile. The ripe fruits are deep red and have a strong, berry-like aroma with hints of pine, fir, and green tea.
The mildly spicy Guajillo chili is versatile. Sauces, salsas, dips, and marinades get a very special touch from this delicious chili variety.
