Smoked jalapeños are called chipotle. The jalapeño is one of the most important and popular chili peppers in Mexico and the USA. It is medium-hot and very fruity. Because of its relatively thick flesh, jalapeños are not well-suited for air drying. Therefore, smoking the ripe fruits has been a popular method of drying and preserving them for centuries. The Aztecs developed this technique. Mesquite wood is used for smoking, which gives the dried fruits a strong, smoky flavor. Smoking reduces the chili pepper's weight by approximately 90%.
Chipotle is used as a spicy ingredient in BBQ products, stews, sauces and spice blends.
