Ancho is the dried version of the Poblano chili, which originates from Mexico. This very mild chili variety, especially popular in Mexico, produces very large fruits that can grow up to 15 cm long and 7 cm thick. The unripe fruits are green and turn dark red to almost black as they ripen. While the unripe, green Poblano chili is usually used fresh, the fully ripe, dark fruits are dried. At this stage, the fruit is called Ancho (Spanish for "broad") because the chili transforms into a flat, very wide, heart-shaped pod. The dried pods are sold ground or crushed. This very mild variety has a fruity, almost sweet flavor reminiscent of dried raisins, licorice, tobacco, and coffee. Ancho is often combined with hotter chili varieties to significantly reduce the overall heat.
This chili goes perfectly with dark sauces, meat dishes and pasta, or can also be combined with chocolate and fruit.
