Maseca cornmeal is a flour made from white corn. It is nixtamalized (pre-cooked with lime) and can therefore be used to make tortillas or other Mexican specialties such as sopes, empanadas, or huaraches. Maseca is made from 100% corn.

Orange pancakes without wheat
Ingredients
250 g Maseca cornmeal
170 g sugar
4 eggs
2 tsp baking powder
55 g butter
300 ml milk
3 tsp grated orange zest
Preparation :
Using a hand mixer, blend all ingredients in a bowl until a smooth batter forms. Heat a little butter in a pan and pour some of the batter into the hot fat. Once the pancake is set, flip it several times until golden brown. Serve the finished pancakes with honey, butter, or jam for breakfast or as a snack.
